The High Lonesome Ranch
The High Lonesome Ranch is one of the regenerative farms we buy suet from. They steward more than 300 square miles of rangeland, mountain forest and stream on Colorado's Western Slope. Their cattle are 100% grass-fed and grass-finished, grazing between 4,000 and 9,000 feet and eating from more than 60 plant species in a day. They are never given synthetic hormones, added growth steroids or sub-therapeutic antibiotics.
We buy suet specifically, the hard fat from around the kidneys and organs, rather than trim fat from elsewhere on the animal. Suet renders into a cleaner, near-odorless tallow. Trim fat carries an odor that has to be covered with fragrance, and we do not use fragrance of any kind, synthetic or botanical. It is a more expensive way to buy fat, and it is most of the reason people who expect the Whip to smell like beef are surprised when it does not.
