Suet is the hard fat packed around the kidneys and loin, deep inside the body cavity. It sits away from muscle, away from the blood supply that feeds working tissue, and away from the surface of the animal. Trim fat is everything else that gets pared off during butchering: back fat, the fat caps on primal cuts, the intermuscular fat threaded through muscle. Most commercial tallow is rendered from trim, because trim is abundant and cheap and it is what a processing line produces in volume. Suet is scarce. A full-grown steer carries only a small mass of it, roughly 1% of live weight.
The two fats are not chemically identical, and this is where food science is useful rather than decorative. Adipose tissue from different depots on the same animal carries different fatty acid profiles. In a study of adipose maturity across Japanese Black, Holstein, and crossbred steers, the perirenal depot, which is the kidney fat that becomes suet, ran measurably higher in saturated fatty acids than the subcutaneous depot that becomes trim (Yang et al., Meat Science, PubMed 21951906). Human depot research shows the same pattern across sites: perirenal fat holds the highest proportion of saturated fatty acids of any depot measured, with monounsaturated fat running in the reverse order (American Journal of Clinical Nutrition, 50(2):288).
More saturated fat means harder, firmer, more stable material once rendered. That stability matters in a balm. A more saturated fat resists oxidation longer, holds its structure at room temperature, and gives a formulator a cleaner base to build on. Trim tallow is not bad fat. Why suet renders cleaner and near-odorless

Because kidney fat sits deep in the body cavity, insulated from muscle and away from the blood supply, it starts life low in exactly those impurities. There is less muscle protein clinging to it, less blood, less of the connective tissue that has to be filtered back out. Trim fat, by contrast, is pared from the surface and from between muscles, so it arrives carrying more of the protein and blood residue that later reads as odor. You can refine trim fat toward neutrality, but you are correcting a problem that suet mostly does not have in the first place.
The second half of the smell story is oxidation. When tallow goes rancid, it develops off-notes from secondary oxidation products, volatile compounds with very low sensory thresholds, meaning a tiny amount is enough to smell (Xu et al., Food Chemistry, thermal oxidation of tallow). A more saturated fat, which is what suet delivers, has fewer of the double bonds that oxygen attacks, so it holds off that rancid turn longer.
